Sweet onion
Allium cepa, commonly known as onion, is a biennial herbaceous plant belonging to the amaryllidaceae family. It is the most cultivated species of the Allium gender, which contains several species that are called “onions” and that are grown as food.
Sweet onion is a food that is characterized by its low caloric value and high fiber content. It contains significant amounts of potassium, calcium and some vitamins. Among its components is quercetin, which has an antioxidant effect, and also low sulfur components, which decrease its characteristic odor (low pungency level). One of them, thiopropanal oxide is formed by enzymatic reactions when the onion is chopped and is the cause of tearing. In the case of sweet onion, the level of thiopropanal oxide is lower and therefore does not cause the tear effect. And rather, it presents a sweet and pleasant taste on the palate due to its high level of natural sugar and water.
